Chefs Nando Chang & Valerie Chang Cumpa grew up in Chiclayo, Peru, and moved to the United States when they were 12 and 10 years old, respectively, where they spent their childhood watching father Papa Fernando cook. The Chang’s cooking style developed as they explored their connection with the food of their birthplace. In 2018, Val, Nando, and their father, Fernando, opened Itamae in the Miami Design District food hall. The following year the team opened a fast-casual offshoot concept, B-Side, inside popular Food Hall 1-800-LUCKY.
