Ingredients
- 1 package (11 ounces) vanilla wafers
- 2/3 cup chopped pecans
- 1/2 cup butter, melted
- 1/4 cup frozen orange juice concentrate, thawed
- 3 cups confectioners’ sugar, divided
Directions
- Place vanilla wafer cookies and pecans in a food processor; pulse until fine crumbs form. Add butter, thawed orange juice concentrate and one cup of confectioners sugar; pulse until mixture comes together.
- Shape mixture into 1-in. balls; roll in remaining confectioners sugar. Store at room temperature.
